Any bike suggestions, hardware recommendations, or tips for a new biker with limited use of one hand?

I am looking into getting bikes for both my wife and myself. I think that a bike like the trek verve 2 would be good for both of us, as we are both newbies and looking for comfortable bike riding.

However, my barrier to biking is limited use of my right arm due to an injury. I can hold the handlebar just fine, but cannot reach the brake or shifters. Does it matter which bike I get, or are certain bikes better for customization? Would it be best to just find a local bike shop that can customize the brakes and shifting to my left side? The first shop I went too wasn’t very knowledgeable on custom setups, and I’m hesitant to buy anything without being able to brake safely.
