I accidentally stumbled upon this while figuring out how to deal with her first encounter on my MN play through. By constantly shifting around her, you can have it so the bird hit box is right on her as her i-frames finish, allowing her to be stun locked. With level 3 Phoenix, you can probably kill her with 4-5 Ninpos. Hope this helps anybody else who got stuck not knowing what to do with her.
